Ingredients
  

Sloppy Joe Filling
  • 1 pound ground beef 80/20 blend preferred
  • 1 small yellow onion diced finely
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 15 ounces tomato sauce 1 can
  • 2 tablespoons brown sugar packed
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 teaspoon chili powder
  • 0.5 teaspoon smoked paprika
  • salt and black pepper to taste
Biscuit Topping
  • 16.3 ounces refrigerated biscuit dough 1 can
  • 1.5 cups shredded cheddar cheese
  • 2 tablespoons fresh parsley chopped for garnish
  • 2 tablespoons melted butter optional, for brushing

  • Large skillet
  • 9x13 inch baking dish
  • Wooden spoon
  • Measuring cups and spoons

Method
 

  1. Preheat oven to 375°F and lightly grease a 9x13-inch baking dish.
  2. Brown ground beef in large skillet over medium-high heat, breaking apart with wooden spoon, 6-8 minutes. Drain most excess fat.
  3. Add onion and bell pepper to skillet, cooking 4-5 minutes until softened.
  4. Stir in garlic and cook 30 seconds until fragrant.
  5. Add tomato sauce, brown sugar, Worcestershire sauce, mustard, chili powder, paprika, salt and pepper. Stir to combine.
  6. Reduce heat to medium-low and simmer 8-10 minutes until sauce thickens.
  7. Transfer meat mixture to prepared baking dish, spreading evenly.
  8. Separate biscuit dough and arrange biscuits over meat mixture, spacing slightly apart.
  9. Brush biscuit tops with melted butter if desired.
  10. Bake 15-18 minutes until biscuits are golden brown and cooked through.
  11. Sprinkle cheese over biscuits and return to oven for 3-5 minutes until melted.
  12. Let rest 5 minutes, garnish with parsley, and serve hot.

Notes

Store leftovers in airtight container in refrigerator for 3-4 days. Reheat individual portions in microwave or full dish in 350°F oven. Can substitute ground turkey or chicken for beef. Add hot sauce or jalapeños for extra heat.
