Ingredients
  

  • 3 lb beef brisket
  • 2 tbsp olive oil
  • 1 onion sliced
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 carrots sliced
  • 2 tbsp fresh parsley chopped

Equipment

  • Dutch oven or large pot
  • Cutting board
  • Chef knife
  • Wooden spoon

Method
 

  1. Season brisket with salt, pepper, and smoked paprika.
  2. Sear brisket in olive oil until browned on both sides.
  3. Cook onion and garlic in the same pot until softened.
  4. Stir in tomato paste and cook briefly.
  5. Add beef broth and Worcestershire sauce, scraping the pot.
  6. Add carrots, thyme, and bay leaf.
  7. Return brisket to the pot and cover.
  8. Cook slowly for about 3 hours until fork-tender.
  9. Rest brisket, slice against the grain, and serve with sauce.

Notes

Leftover brisket is perfect for sandwiches, tacos, or wraps.
