- Season brisket with salt, pepper, and smoked paprika.
- Sear brisket in olive oil until browned on both sides.
- Cook onion and garlic in the same pot until softened.
- Stir in tomato paste and cook briefly.
- Add beef broth and Worcestershire sauce, scraping the pot.
- Add carrots, thyme, and bay leaf.
- Return brisket to the pot and cover.
- Cook slowly for about 3 hours until fork-tender.
- Rest brisket, slice against the grain, and serve with sauce.
