Ingredients
  

Beef Base
  • 2.5 lbs beef chuck roast cut into large chunks
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth low sodium
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp dried thyme
Thickening & Noodles
  • 2 tbsp cornstarch mixed with 3 tbsp water
  • 12 oz wide egg noodles
  • 2 tbsp unsalted butter
  • 0.5 cup sour cream optional
Garnish
  • 2 tbsp fresh parsley or chives chopped

Equipment

Method
 

  1. Season and add beef, onions, garlic, broth, and seasonings to slow cooker.
  2. Cook on low 8–9 hours or high 4–5 hours until beef is fork tender.
  3. Shred beef, mix cornstarch slurry, and stir into broth to thicken.
  4. Return beef, add noodles, and cook 20–30 minutes until tender.
  5. Add butter and sour cream if desired. Garnish with parsley and serve.

Notes

Best served fresh. For freezing, omit noodles and add fresh when reheating.
