Ingredients
  

Soup Base
  • 1 lb Italian sausage browned
  • 1 onion diced
  • 3 cloves garlic minced
  • 14.5 oz diced tomatoes
  • 4 cups chicken broth
  • 1 tbsp Italian seasoning
  • salt and pepper to taste
Finish
  • 1 cup heavy cream
  • 9-12 oz cheese tortellini
  • 2 cups spinach fresh

Method
 

  1. Brown sausage in a skillet and drain excess fat.
  2. Add sausage, onion, garlic, tomatoes, broth, and seasonings to the slow cooker.
  3. Cook on LOW for 5–6 hours or HIGH for 2–3 hours.
  4. Stir in heavy cream and tortellini during the last 15–20 minutes.
  5. Add spinach and let wilt.
  6. Season to taste and serve hot.

Notes

For extra creaminess, stir in 2 oz cream cheese before adding the tortellini.
