Ingredients
  

  • 3 lb chuck roast
  • 3 yellow onions thinly sliced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • salt and black pepper to taste

Method
 

  1. Season and sear the chuck roast.
  2. Transfer roast to slow cooker.
  3. Sauté onions and garlic in butter.
  4. Deglaze with broth and Worcestershire sauce.
  5. Add onion mixture, herbs, and cover.
  6. Cook on low until fork-tender.

Notes

Serve with mashed potatoes or crusty bread for best results.
