Ingredients
  

Sandwich Filling
  • 1 can chickpeas 15 oz, drained and rinsed
  • 1 ripe avocado
  • 0.25 cup dill pickles finely chopped
  • 1 tbsp pickle juice
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill chopped
  • 0.25 tsp garlic powder
  • salt and black pepper to taste
For Serving
  • 4 slices whole grain bread

Equipment

  • Mixing bowl

Method
 

  1. Mash chickpeas in a bowl until chunky.
  2. Add avocado and mash until creamy but textured.
  3. Stir in pickles, pickle juice, lemon juice, dill, garlic powder, salt, and pepper.
  4. Spread mixture onto bread slices and assemble sandwiches.

Notes

Best enjoyed fresh. Add extra lemon juice to help prevent avocado browning.
