  • 14 oz smoked sausage sliced
  • 2 sweet potatoes peeled and cubed
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 bell pepper sliced
  • 1 onion sliced
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • fresh parsley for garnish

Method
 

  1. Heat olive oil in a large skillet and brown sliced smoked sausage on both sides. Remove and set aside.
  2. Add butter to the skillet and cook sweet potato cubes for 8–10 minutes, stirring occasionally.
  3. Add onion and bell pepper, cooking until softened.
  4. Stir in garlic, paprika, Italian seasoning, salt, pepper, and red pepper flakes.
  5. Return sausage to the skillet and cook 2–3 minutes to heat through.
  6. Garnish with parsley and serve warm.

Notes

Add spinach, zucchini, or mushrooms for extra vegetables or a drizzle of honey for sweetness.
