Method
- Heat olive oil in a large skillet and brown sliced smoked sausage on both sides. Remove and set aside.
- Add butter to the skillet and cook sweet potato cubes for 8–10 minutes, stirring occasionally.
- Add onion and bell pepper, cooking until softened.
- Stir in garlic, paprika, Italian seasoning, salt, pepper, and red pepper flakes.
- Return sausage to the skillet and cook 2–3 minutes to heat through.
- Garnish with parsley and serve warm.
Notes
Add spinach, zucchini, or mushrooms for extra vegetables or a drizzle of honey for sweetness.
