  • 1 cup red lentils rinsed
  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 cups spinach

Method
 

  1. Sauté onion and garlic.
  2. Add spices and cook briefly.
  3. Add lentils and liquid, simmer.
  4. Stir in spinach and finish with lemon.
