Ingredients
  

  • 2 cups all-purpose flour
  • 1 box instant pistachio pudding mix 3.4 oz
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips
  • 0.5 cup pistachios chopped

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets.
  2. Whisk flour, pudding mix, baking soda, and salt.
  3. Cream butter and sugars until fluffy.
  4. Beat in eggs and vanilla.
  5. Mix dry ingredients into wet until just combined.
  6. Fold in white chocolate chips and pistachios.
  7. Scoop dough and place on baking sheets.
  8. Bake 10–12 minutes until edges are set.

Notes

Do not overbake for best chewiness.
