Ingredients
  

  • 8 oz cream cheese softened
  • 0.5 cup unsalted butter softened
  • 0.75 cup powdered erythritol
  • 1 egg large, room temperature
  • 1 tsp vanilla extract
  • 1.75 cups almond flour finely ground
  • 0.5 tsp baking powder
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat cream cheese and butter until smooth and fluffy.
  3. Add powdered sweetener and mix until light.
  4. Mix in egg and vanilla extract until combined.
  5. Whisk almond flour, baking powder, and salt in a separate bowl.
  6. Fold dry ingredients into wet mixture until dough forms.
  7. Scoop dough onto baking sheet and flatten slightly.
  8. Bake for 10–12 minutes until just set.
  9. Cool completely before serving.

Notes

Cookies will firm up as they cool. Do not overbake.
