Hoe Cakes
  • 1 cup cornmeal
  • 0.5 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 tbsp sugar optional
  • 1 egg
  • 1 cup milk
  • 2 tbsp butter or oil for cooking

Method
 

  1. Whisk together cornmeal, flour, baking powder, salt, and sugar if using.
  2. Stir in egg and milk until a thick batter forms.
  3. Heat butter or oil in a skillet over medium heat.
  4. Spoon batter into skillet and spread into thin rounds.
  5. Cook until edges are golden, then flip and cook until crisp.
  6. Remove from skillet and serve warm.

Notes

Serve immediately for best texture.
