Ingredients
  

Peach Cobbler Filling
  • 2 cups peaches diced
  • 0.5 cup brown sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter
Egg Rolls
  • 10-12 egg roll wrappers
  • 1 egg beaten
  • vegetable oil for frying
Cinnamon Sugar
  • 0.5 cup granulated sugar
  • 1 tsp cinnamon

Equipment

  • Saucepan
  • Mixing bowls
  • Deep skillet or fryer
  • Tongs

Method
 

  1. Cook peaches, sugar, spices, lemon juice, cornstarch, and butter until thickened.
  2. Cool filling slightly before assembling egg rolls.
  3. Fill and tightly roll egg roll wrappers, sealing with egg wash.
  4. Heat oil to 350°F (175°C).
  5. Fry egg rolls until golden and crisp.
  6. Drain briefly and toss in cinnamon sugar.

Notes

Best served warm and freshly fried for maximum crunch.
