- Cook peaches, sugar, spices, lemon juice, cornstarch, and butter until thickened.
- Cool filling slightly before assembling egg rolls.
- Fill and tightly roll egg roll wrappers, sealing with egg wash.
- Heat oil to 350°F (175°C).
- Fry egg rolls until golden and crisp.
- Drain briefly and toss in cinnamon sugar.
