Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 0.5 cup red bell pepper diced
  • 0.5 cup green onions sliced
  • 1 cup shredded cheese cheddar or Mexican blend
  • 4 oz cream cheese softened
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 12 count egg roll wrappers
  • oil for frying

Equipment

  • Mixing bowl
  • Frying pan or deep skillet
  • Tongs
  • Paper towels

Method
 

  1. In a large bowl, mix chicken, beans, corn, peppers, green onions, cheeses, and spices.
  2. Lay egg roll wrapper on a flat surface with one corner facing you.
  3. Place filling in the center of wrapper.
  4. Fold bottom corner over filling, then fold in sides and roll tightly.
  5. Seal edge with water.
  6. Heat oil to 350°F (175°C).
  7. Fry egg rolls until golden brown, turning as needed.
  8. Drain on paper towels and serve warm.

Notes

Egg rolls can be baked or air fried for a lighter option.
