Method
- In a large bowl, mix chicken, beans, corn, peppers, green onions, cheeses, and spices.
- Lay egg roll wrapper on a flat surface with one corner facing you.
- Place filling in the center of wrapper.
- Fold bottom corner over filling, then fold in sides and roll tightly.
- Seal edge with water.
- Heat oil to 350°F (175°C).
- Fry egg rolls until golden brown, turning as needed.
- Drain on paper towels and serve warm.
Notes
Egg rolls can be baked or air fried for a lighter option.
