  • 6 slices bacon chopped
  • 3 eggs large
  • 1 cup Parmesan cheese freshly grated
  • 2 cloves garlic minced, optional
  • 0.5 tsp salt
  • 0.25 tsp black pepper plus more for garnish

Method
 

  1. Cook spaghetti until al dente and reserve pasta water.
  2. Cook chopped bacon until crispy, set aside.
  3. Optionally sauté garlic in bacon fat for 30 seconds.
  4. Whisk eggs with Parmesan, salt, and pepper.
  5. Off heat, toss hot pasta with egg mixture, adding reserved pasta water as needed.
  6. Stir in crispy bacon, garnish, and serve immediately.

Notes

Work quickly with the eggs to avoid scrambling.
