- Cook spaghetti in salted water until al dente. Reserve pasta water and drain.
- Heat olive oil in a skillet over medium heat. Add garlic and cook until fragrant.
- Stir in sun-dried tomatoes and cook 1 minute.
- Pour in cream and simmer gently until slightly thickened.
- Add spinach and cook until wilted.
- Add spaghetti and toss with sauce, adding pasta water as needed.
- Stir in parmesan, season with salt and pepper, and serve.
Notes
Use reserved pasta water to adjust sauce consistency for a silky finish.
