Ingredients
  

Pasta
  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 3 cups fresh spinach
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Cook spaghetti in salted boiling water until al dente. Reserve 1/2 cup pasta water before draining.
  2. Sauté garlic in olive oil, then add sun-dried tomatoes.
  3. Pour in heavy cream and simmer until slightly thickened.
  4. Stir in spinach and cook until wilted.
  5. Add Parmesan and seasonings, stirring until smooth.
  6. Toss pasta with sauce, adding reserved pasta water as needed. Serve immediately.

Notes

Add reserved pasta water gradually to achieve desired sauce consistency.
