Method
- Heat oil in a saucepan over medium heat.
- Add rice and toast, stirring, until lightly golden.
- Stir in onion and cook until softened.
- Add garlic and cook briefly until fragrant.
- Mix in tomato paste and cook until deepened in color.
- Add broth, water, cumin, paprika, and salt.
- Bring to a boil, reduce heat, cover, and simmer until liquid is absorbed.
- Remove from heat, rest covered, then fluff and serve.
Notes
For fluffier rice, allow it to rest before fluffing.
