Ingredients
  

  • 1 cup long-grain white rice
  • 2 tbsp vegetable oil
  • 0.5 cup onion finely diced
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 1.5 cups chicken or vegetable broth
  • 0.5 cup water
  • 0.5 tsp ground cumin
  • 0.5 tsp paprika
  • 1 tsp salt or to taste

Equipment

  • Saucepan or skillet with lid
  • Wooden spoon

Method
 

  1. Heat oil in a saucepan over medium heat.
  2. Add rice and toast, stirring, until lightly golden.
  3. Stir in onion and cook until softened.
  4. Add garlic and cook briefly until fragrant.
  5. Mix in tomato paste and cook until deepened in color.
  6. Add broth, water, cumin, paprika, and salt.
  7. Bring to a boil, reduce heat, cover, and simmer until liquid is absorbed.
  8. Remove from heat, rest covered, then fluff and serve.

Notes

For fluffier rice, allow it to rest before fluffing.
