Ingredients
  

Rice Base
  • 3 cups cooked rice cold, day-old
  • 4 cloves garlic minced
  • 1 tbsp chili garlic paste
  • 0.5 tsp red chili flakes adjust to taste
  • 2 tbsp oil neutral
  • 1.5 tbsp soy sauce
  • salt and black pepper to taste
  • 2 tbsp green onions chopped

Equipment

  • Wok or large skillet
  • Spatula

Method
 

  1. Heat oil in a wok or skillet over medium-high heat.
  2. Add garlic and sauté until fragrant.
  3. Stir in chili flakes and chili garlic paste.
  4. Add rice and toss to coat evenly.
  5. Drizzle in soy sauce and season with salt and pepper.
  6. Stir-fry until rice is hot and slightly crisp.
  7. Add green onions and toss before serving.

Notes

Best made with cold rice for perfect texture.
