Ingredients
  

Tuna Filling
  • 2 cans tuna drained
  • 3 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 stalk celery finely diced
  • 2 tbsp red onion finely diced
  • 1-2 jalapeños thinly sliced
  • 1 cup cheddar cheese shredded
  • 4 slices sourdough bread
  • 2 tbsp butter softened
  • salt to taste
  • black pepper to taste

Method
 

  1. In a bowl, combine drained tuna, mayonnaise, Dijon mustard, lemon juice, celery, and red onion.
  2. Season the mixture with salt and black pepper and mix until creamy.
  3. Spread butter on one side of each slice of bread.
  4. Place two slices of bread butter-side down and spread tuna mixture evenly on top.
  5. Add shredded cheddar cheese and jalapeño slices over the tuna.
  6. Top with remaining bread slices butter-side up.
  7. Cook sandwiches in a skillet over medium heat for 3–4 minutes per side until golden and cheese melts.
  8. Slice and serve hot.

Notes

For extra spice, add pickled jalapeños or hot sauce to the tuna mixture.
