Method
- Rinse lentils under cold water.
- Heat olive oil in a pot and sauté onion until soft.
- Add garlic and ginger and cook until fragrant.
- Stir in cumin, paprika, turmeric, and chili flakes.
- Add tomato and cook until softened.
- Add lentils and vegetable broth and simmer 15–20 minutes.
- Stir in spinach and cook until wilted.
- Season with salt, pepper, and lemon juice before serving.
