Ingredients
  

Lentil Stew
  • 1 cup red lentils rinsed
  • 3 cups vegetable broth
  • 2 cups fresh spinach
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 0.5 tsp turmeric
  • 0.5 tsp chili flakes
  • 1 tomato chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 lemon juiced

Equipment

  • Large pot
  • Cutting board

Method
 

  1. Rinse lentils under cold water.
  2. Heat olive oil in a pot and sauté onion until soft.
  3. Add garlic and ginger and cook until fragrant.
  4. Stir in cumin, paprika, turmeric, and chili flakes.
  5. Add tomato and cook until softened.
  6. Add lentils and vegetable broth and simmer 15–20 minutes.
  7. Stir in spinach and cook until wilted.
  8. Season with salt, pepper, and lemon juice before serving.

Notes

Serve with rice or flatbread for a complete meal.
