Ingredients
  

  • 1 pie crust prepared
  • 6 eggs large
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup artichoke hearts chopped
  • 0.5 cup onion chopped
  • 2 cloves garlic minced
  • 1.25 cups shredded cheese mozzarella, Gruyère, or mix
  • 1 tbsp olive oil
  • salt and black pepper to taste

Method
 

  1. Preheat oven and prepare crust in pie dish.
  2. Sauté onion and garlic in olive oil.
  3. Add spinach and cook until wilted.
  4. Whisk eggs and cream with seasoning.
  5. Layer vegetables and cheese in crust.
  6. Pour egg mixture over filling.
  7. Bake until center is set and lightly golden.

Notes

Let rest 10 minutes before slicing for clean cuts.
