Ingredients
  

  • 1 cup green lentils rinsed
  • 1.5 cups butter beans cooked
  • 4 cups vegetable broth
  • 3 cups fresh spinach

  • Wooden spoon

Method
 

  1. Sauté onion, carrots, and celery in olive oil.
  2. Add garlic and spices and cook briefly.
  3. Add lentils and broth and simmer until tender.
  4. Stir in butter beans and simmer.
  5. Add spinach, season, and serve.
