Ingredients
  

Salad
  • 3 cucumbers Persian or English
  • 2 cloves garlic minced
  • 2 green onions sliced
  • 1 tbsp Korean red chili flakes
  • 1 tbsp rice vinegar
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 0.5 tsp salt
  • 1 tsp sesame oil
  • 1 tsp sesame seeds toasted

Method
 

  1. Spiral cut cucumbers using chopsticks as guides.
  2. Salt cucumbers and let sit 10 minutes.
  3. Rinse and pat dry.
  4. Mix garlic, chili flakes, vinegar, soy sauce, sugar, and sesame oil.
  5. Toss cucumbers with dressing and green onions.
  6. Top with sesame seeds and serve.

Notes

Best served fresh. Adjust chili flakes to preferred spice level.
