Ingredients
  

Apple Cider Chicken
  • 1.5 lbs chicken thighs or breasts boneless, skinless
  • 1 cup apple cider
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic minced
  • 1 tsp fresh thyme
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
Crisp Autumn Slaw
  • 2 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • 1 cup carrots julienned
  • 1 apple thinly sliced
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup

Equipment

  • Large skillet
  • Mixing bowls

Method
 

  1. Season chicken with salt and pepper.
  2. Sear chicken in olive oil until golden; remove from skillet.
  3. Add garlic, cider, mustard, honey, vinegar, and herbs; simmer until reduced.
  4. Return chicken to skillet and coat with glaze until cooked through.
  5. Toss slaw ingredients together and serve alongside chicken.

Notes

Reduce sauce slowly for best sticky texture.
