Ingredients
  

Strawberry Syrup
  • 2 cups fresh strawberries hulled and sliced
  • 0.5 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract

  • 0.5 cup heavy cream
  • 2 tbsp powdered sugar
  • fresh strawberries for garnish

Method
 

  1. In a large bowl, combine sliced strawberries with granulated sugar and lemon juice. Mash gently with a fork and let macerate for 15 minutes to release natural juices.
  2. Strain the strawberry mixture through a fine-mesh sieve, pressing solids to extract maximum juice. Reserve the liquid and discard solids.
  3. Stir vanilla extract into the strawberry syrup and mix well to combine all flavors evenly.
  4. In a separate bowl, whip heavy cream with powdered sugar until soft peaks form, creating a light and fluffy topping.
  5. Fill serving glasses with ice cubes, then add 2-3 tablespoons of strawberry syrup to each glass.
  6. Slowly pour sparkling water into each glass, stirring gently to combine the syrup and water without losing carbonation.
  7. Top each glass with a generous dollop of whipped cream and garnish with fresh strawberry slices.
  8. Serve immediately with straws and enjoy this refreshing homemade strawberry cream soda while perfectly chilled.

Notes

The strawberry syrup can be made up to a week in advance and stored in the refrigerator. For a smoother texture, blend the macerated strawberries before straining. Adjust sweetness to taste by adding more or less sugar.
