Ingredients
  

Almond Flour Crust
  • 2 cups almond flour
  • 0.5 cup unsalted butter melted
  • 0.25 cup powdered keto sweetener
  • 0.5 tsp vanilla extract
Cream Cheese Layer
  • 8 oz cream cheese softened
  • 0.5 cup powdered keto sweetener
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
Chocolate Pudding Layer
  • 1.5 cups heavy cream
  • 0.5 cup unsweetened almond milk
  • 0.33 cup unsweetened cocoa powder
  • 0.25 cup powdered keto sweetener
  • 2 tbsp chia seeds or 1 tsp xanthan gum
  • 0.5 tsp vanilla extract
Topping
  • 1 cup heavy whipping cream
  • 2 tbsp powdered keto sweetener

Equipment

  • Mixing bowls
  • 9x13 inch baking dish
  • Electric mixer

Method
 

  1. Mix crust ingredients and press into baking dish.
  2. Bake crust 10–12 minutes and cool.
  3. Beat cream cheese and sweetener; fold in whipped cream.
  4. Spread cream cheese layer over crust and chill.
  5. Cook pudding ingredients until thickened.
  6. Spread pudding over cream cheese layer and chill 1–2 hours.
  7. Top with whipped cream and refrigerate before slicing.

Notes

Chill thoroughly for clean slices. Best served cold.
