Ingredients
  

  • 1.5 pounds small golden potatoes halved if large
  • 0.25 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1.5 tsp ground sumac
  • 0.5 red onion thinly sliced
  • 0.25 cup fresh parsley chopped
  • 0.75 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Boil potatoes until fork-tender.
  2. Whisk olive oil, lemon juice, zest, sumac, salt, and pepper.
  3. Combine warm potatoes with onion and herbs.
  4. Toss with dressing and garnish with extra sumac.

Notes

Dress potatoes while warm for best flavor absorption.
