Ingredients
  

Sandwich
  • 4 slices bread sourdough or country white
  • 2 tbsp unsalted butter softened
  • 3 tbsp basil pesto
  • 0.5 cup mozzarella cheese shredded
  • 0.25 cup sun-dried tomatoes sliced
  • 0.25 cup provolone or fontina optional

Equipment

  • Skillet or griddle
  • Spatula
  • Butter knife

Method
 

  1. Heat skillet over medium-low heat.
  2. Butter one side of each bread slice.
  3. Spread pesto on unbuttered side and add cheese and sun-dried tomatoes.
  4. Assemble sandwiches and place in skillet butter-side down.
  5. Cook until golden, flip, and cook until cheese melts.

Notes

Cook low and slow for best melt and crisp texture.
