Ingredients
  

Churro Bites
  • 1 cup water
  • 2.5 tbsp unsalted butter
  • 1 tbsp granulated sugar
  • 0.5 tsp salt
  • 1 cup all-purpose flour
  • 2 eggs large
  • 1 tsp vanilla extract
  • cooking spray or oil for air fryer
Cinnamon Sugar Coating
  • 0.5 cup granulated sugar
  • 2 tbsp ground cinnamon
  • 2 tbsp melted butter

  • Medium saucepan
  • Wooden spoon
  • Cookie scoop or spoon
  • Shallow mixing bowl

Method
 

  1. In a medium saucepan, combine water, butter, sugar, and salt. Bring to a rolling boil over medium-high heat.
  2. Remove from heat and add flour all at once. Stir vigorously until mixture forms a smooth ball.
  3. Cool for 5 minutes, then add eggs one at a time, beating well. Stir in vanilla extract.
  4. Preheat air fryer to 375°F (190°C). Mix sugar and cinnamon in a shallow bowl.
  5. Portion dough into 1-inch balls and place in air fryer basket with space between pieces.
  6. Spray churro bites with cooking spray or brush with oil.
  7. Air fry for 8-10 minutes, shaking basket halfway through, until golden brown.
  8. Brush with melted butter while warm, then toss in cinnamon sugar mixture until coated.

Notes

Best served immediately while warm. Can be reheated in air fryer for 1-2 minutes to restore crispiness. Store in airtight container for up to 3 days.
