- In a medium saucepan, combine water, butter, sugar, and salt. Bring to a rolling boil over medium-high heat.
- Remove from heat and add flour all at once. Stir vigorously until mixture forms a smooth ball.
- Cool for 5 minutes, then add eggs one at a time, beating well. Stir in vanilla extract.
- Preheat air fryer to 375°F (190°C). Mix sugar and cinnamon in a shallow bowl.
- Portion dough into 1-inch balls and place in air fryer basket with space between pieces.
- Spray churro bites with cooking spray or brush with oil.
- Air fry for 8-10 minutes, shaking basket halfway through, until golden brown.
- Brush with melted butter while warm, then toss in cinnamon sugar mixture until coated.
Notes
Best served immediately while warm. Can be reheated in air fryer for 1-2 minutes to restore crispiness. Store in airtight container for up to 3 days.
