Ingredients

  • 1.5 lbs boneless, skinless chicken thighs cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • salt and black pepper to taste
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 0.5 cup sweet chili sauce
  • 3 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 2 green onions thinly sliced, for garnish
  • 1 tsp toasted sesame seeds optional, for garnish

Method
 

  1. Pat chicken pieces dry and season with salt and black pepper.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until golden brown on all sides, about 5–6 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, add minced garlic and grated ginger. Sauté for 30 seconds until fragrant.
  4. Add sweet chili sauce, honey, soy sauce, rice vinegar, and sesame oil to the skillet. Stir well and bring to a gentle simmer.
  5. Return chicken to the skillet, tossing to coat each piece in the sauce. Simmer for 3–4 minutes until chicken is cooked through and sauce thickens.
  6. Transfer chicken to a serving dish, garnish with green onions and sesame seeds. Serve immediately.

Notes

Adjust honey and chili sauce to your preferred level of sweetness and spice.
