Ingredients
  

Pancakes
  • 1.5 cups all-purpose flour
  • 1 tbsp baking powder
  • 2 tbsp sugar
  • 0.25 tsp salt
  • 0.5 cup shredded coconut
  • 1 cup coconut milk
  • 2 eggs large
  • 3 tbsp butter melted
  • 1 tsp vanilla extract
Coconut Cream Drizzle
  • 0.5 cup coconut cream
  • 0.25 cup powdered sugar
  • 0.5 tsp vanilla extract

Method
 

  1. Whisk flour, baking powder, sugar, salt, and shredded coconut in a bowl.
  2. Mix coconut milk, eggs, melted butter, and vanilla in another bowl.
  3. Combine wet and dry ingredients until just mixed.
  4. Heat a pan over medium heat and cook pancakes until golden on both sides.
  5. Whisk coconut cream, powdered sugar, and vanilla to make the drizzle.
  6. Serve pancakes stacked with coconut cream drizzle and toasted coconut.

Notes

Add pineapple or mango for a more tropical twist.
