Ingredients
  

Filling
  • 2 cups mashed sweet potatoes
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 0.5 cup milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp ginger
  • 0.25 tsp salt
Crust
  • 1 pie crust unbaked

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mash sweet potatoes until smooth.
  3. Mix sweet potatoes with sugars until combined.
  4. Add butter, eggs, milk, and vanilla and mix well.
  5. Stir in spices and salt.
  6. Pour into crust and smooth top.
  7. Bake 50–60 minutes until set.
  8. Cool completely before serving.

Notes

For best flavor, roast sweet potatoes instead of boiling.
