Ingredients
  

Crust
  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 tsp salt
  • 0.75 cup unsalted butter cold, cubed
Sweet Potato Filling
  • 2 cups mashed sweet potatoes
  • 0.75 cup brown sugar packed
  • 2 eggs large
  • 0.5 cup evaporated milk
  • 0.25 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp ginger
  • 0.25 tsp salt

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line baking pan with parchment.
  2. Mix flour, sugar, salt, and butter until crumbly and press into pan.
  3. Bake crust 15 minutes and set aside.
  4. Whisk sweet potatoes, sugar, eggs, milk, butter, vanilla, and spices.
  5. Pour filling over crust and spread evenly.
  6. Bake 35–40 minutes until set.
  7. Cool completely and chill before slicing.

Notes

Bars slice best when fully chilled.
