Ingredients
  

  • 3 sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp smoked paprika optional
  • 0.25 red onion thinly sliced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp extra virgin olive oil for dressing
  • 0.25 cup feta cheese optional
  • 2 tbsp toasted pecans or walnuts optional

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Toss cubed sweet potatoes with olive oil, salt, pepper, and paprika.
  3. Spread on baking sheet and roast 25–30 minutes until tender.
  4. Whisk lemon juice, zest, and olive oil together.
  5. Combine roasted sweet potatoes with onion and parsley.
  6. Drizzle dressing over salad and toss gently.
  7. Top with feta and nuts if desired and serve.

Notes

Can be served warm, room temperature, or chilled. Add protein to make it a full meal.
