Ingredients
  

  • 2 cups sliced mushrooms cremini or button
  • 0.5 onion thinly sliced
  • 1 clove garlic minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 slices Swiss cheese
  • 4 slices bread sourdough or rye

Method
 

  1. Sauté mushrooms in butter and oil until browned and moisture evaporates.
  2. Add onions, garlic, and thyme; cook until softened.
  3. Butter bread slices and assemble sandwiches with cheese and mushroom mixture.
  4. Cook sandwiches in skillet until golden and cheese is melted.
  5. Slice and serve hot.

Notes

Cook over medium-low heat for best cheese melt.
