Method
- Peel and thinly slice the onions into uniform rings or half-moons.
- In a large skillet over medium heat, melt butter with olive oil.
- Add onions and stir to coat with butter and oil. Cook for 10–15 minutes until softened.
- Sprinkle brown sugar over onions and continue to cook on low heat for 25–30 minutes until golden brown.
- Stir in apple cider vinegar, salt, pepper, and smoked paprika. Cook for another 2–3 minutes.
- Transfer to a serving dish and garnish with fresh thyme sprigs.
Notes
For extra sweetness, increase brown sugar. Can be stored in the fridge for up to 3 days.
