  • 4 large yellow onions peeled and thinly sliced
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 tbsp brown sugar packed
  • 1 tbsp apple cider vinegar
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper
  • 0.25 tsp smoked paprika optional
  • Fresh thyme sprigs for garnish

Method
 

  1. Peel and thinly slice the onions into uniform rings or half-moons.
  2. In a large skillet over medium heat, melt butter with olive oil.
  3. Add onions and stir to coat with butter and oil. Cook for 10–15 minutes until softened.
  4. Sprinkle brown sugar over onions and continue to cook on low heat for 25–30 minutes until golden brown.
  5. Stir in apple cider vinegar, salt, pepper, and smoked paprika. Cook for another 2–3 minutes.
  6. Transfer to a serving dish and garnish with fresh thyme sprigs.

Notes

For extra sweetness, increase brown sugar. Can be stored in the fridge for up to 3 days.
