Ingredients
  

Soup Base
  • 1 cup red lentils rinsed
  • 1 tbsp coconut oil
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp red Thai curry paste
  • 0.5 tsp turmeric
  • 0.5 tsp ground cumin
  • 4 cups vegetable broth
  • 1 can coconut milk full-fat
  • 1 tbsp lime juice fresh
  • to taste salt and black pepper

Method
 

  1. Heat coconut oil in a large pot over medium heat.
  2. Add onion and sauté until soft and translucent.
  3. Stir in garlic and ginger and cook until fragrant.
  4. Add curry paste, turmeric, and cumin; toast briefly.
  5. Add lentils and vegetable broth. Bring to a simmer.
  6. Simmer until lentils are very soft, stirring occasionally.
  7. Stir in coconut milk and cook until creamy.
  8. Season with lime juice, salt, and pepper. Serve hot.

Notes

Adjust spice level with extra curry paste or chili oil.
