Method
- Heat coconut oil in a large pot over medium heat.
- Add onion and sauté until soft and translucent.
- Stir in garlic and ginger and cook until fragrant.
- Add curry paste, turmeric, and cumin; toast briefly.
- Add lentils and vegetable broth. Bring to a simmer.
- Simmer until lentils are very soft, stirring occasionally.
- Stir in coconut milk and cook until creamy.
- Season with lime juice, salt, and pepper. Serve hot.
