Ingredients
  

Main Ingredients
  • 4 cups frozen peas no need to thaw
  • 4 oz pancetta diced
  • 1 pear diced, Bosc or Bartlett
  • 2 tbsp butter
  • 1 small onion or shallot finely diced
  • 2 cloves garlic minced
  • 0.5 tsp dried thyme or 1 tsp fresh
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp lemon juice optional
For Garnish
  • fresh thyme or parsley
  • extra pancetta crisped
  • diced pear optional

Method
 

  1. Cook pancetta in a skillet over medium heat until crisp; remove and set aside.
  2. Add butter to pancetta drippings and sauté onion or shallot for 2–3 minutes.
  3. Add garlic and cook 30 seconds.
  4. Stir in diced pear and cook 3–4 minutes until softened.
  5. Add peas, thyme, salt, and pepper; cook 5–7 minutes until heated through.
  6. Return pancetta to the skillet and stir; add lemon juice if desired.
  7. Serve warm with extra pancetta, diced pear, and fresh herbs.

Notes

Best served immediately; pears soften over time.
