Method
- Cook pancetta in a skillet over medium heat until crisp; remove and set aside.
- Add butter to pancetta drippings and sauté onion or shallot for 2–3 minutes.
- Add garlic and cook 30 seconds.
- Stir in diced pear and cook 3–4 minutes until softened.
- Add peas, thyme, salt, and pepper; cook 5–7 minutes until heated through.
- Return pancetta to the skillet and stir; add lemon juice if desired.
- Serve warm with extra pancetta, diced pear, and fresh herbs.
Notes
Best served immediately; pears soften over time.
