Ingredients
  

Slaw
  • 4 cups green cabbage shredded
  • 2 cups purple cabbage shredded
  • 1 cup carrots shredded
  • 2 tbsp fresh parsley chopped
Dressing
  • 0.75 cup plain Greek yogurt
  • 1 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp lemon juice

Method
 

  1. Combine shredded cabbage, carrots, and parsley in a bowl.
  2. Whisk together yogurt, olive oil, vinegar, honey, mustard, salt, pepper, and lemon juice.
  3. Pour dressing over vegetables and toss until coated.
  4. Chill 30 minutes before serving.

Notes

For extra crunch, add sunflower seeds before serving.
