- Boil green beans 3–4 minutes, then transfer to ice water.
- Sauté onions, garlic, and mushrooms in olive oil.
- Add butter, then flour, creating a roux.
- Slowly whisk in broth and milk; simmer to thicken.
- Stir in Greek yogurt off heat, then add salt, pepper, and thyme.
- Combine sauce with green beans and transfer to a baking dish.
- Bake at 375°F (190°C) for 20 minutes.
- Top with crispy onions and bake 5–8 more minutes.
Notes
Add topping right before final bake to keep it crisp.
