Ingredients
  

Casserole
  • 1.5 lbs green beans trimmed and halved
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 8 oz mushrooms sliced
  • 1 tbsp butter
  • 2 tbsp flour
  • 1 cup broth chicken or vegetable
  • 1 cup milk
  • 0.5 cup Greek yogurt optional for creaminess
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp thyme
Topping
  • 0.75 cup crispy fried onions
  • 0.25 cup panko breadcrumbs optional

Method
 

  1. Boil green beans 3–4 minutes, then transfer to ice water.
  2. Sauté onions, garlic, and mushrooms in olive oil.
  3. Add butter, then flour, creating a roux.
  4. Slowly whisk in broth and milk; simmer to thicken.
  5. Stir in Greek yogurt off heat, then add salt, pepper, and thyme.
  6. Combine sauce with green beans and transfer to a baking dish.
  7. Bake at 375°F (190°C) for 20 minutes.
  8. Top with crispy onions and bake 5–8 more minutes.

Notes

Add topping right before final bake to keep it crisp.
