- Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan.
- Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Whisk sugars, eggs, oil, milk, and vanilla until smooth.
- Fold in grated zucchini.
- Combine dry ingredients into wet mixture until just incorporated.
- Pour batter into loaf pan and bake 50–60 minutes.
- Cool before slicing and serving.
Notes
Do not overmix batter. Lightly squeeze zucchini but keep some moisture for best texture.
