- Whisk eggs until completely smooth and uniform.
- Add salt and optional cream; whisk again.
- Melt butter in a nonstick skillet over low heat.
- Pour in the eggs and stir gently and continuously.
- Remove from heat when the eggs look slightly underdone.
- Season with pepper and sprinkle with chives. Serve warm.
Notes
Remove eggs from heat early—they keep cooking off-heat. Add cheese for a richer version.
