Ingredients
  

Eggs
  • 6 large eggs
  • 2 tbsp butter
  • 2 tbsp cream or milk optional
  • 0.25 tsp salt
  • black pepper to taste
  • fresh chives optional

Method
 

  1. Whisk eggs until completely smooth and uniform.
  2. Add salt and optional cream; whisk again.
  3. Melt butter in a nonstick skillet over low heat.
  4. Pour in the eggs and stir gently and continuously.
  5. Remove from heat when the eggs look slightly underdone.
  6. Season with pepper and sprinkle with chives. Serve warm.

Notes

Remove eggs from heat early—they keep cooking off-heat. Add cheese for a richer version.
