Ingredients
  

  • 4 tilapia fillets
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1.5 cups roasted red peppers drained
  • 0.5 cup chicken or vegetable broth
  • 0.25 cup heavy cream
  • 2 cloves garlic minced
  • 0.5 onion chopped

Method
 

  1. Season tilapia with salt, pepper, and paprika.
  2. Sear tilapia in skillet until cooked through; remove.
  3. Sauté onion and garlic in same skillet.
  4. Simmer roasted peppers with broth and seasonings.
  5. Blend sauce until smooth, then return to skillet.
  6. Stir in cream and gently simmer.
  7. Return tilapia to sauce and heat through.

Notes

Serve with rice, pasta, or vegetables to soak up the sauce.
