- Preheat your oven to 375°F (190°C) and line a large disposable aluminum tray with parchment paper if desired.
- Cook the ground meat in a large skillet over medium-high heat, breaking it apart as it cooks until fully browned, about 8-10 minutes.
- Add the taco seasoning and follow package directions, typically adding water and simmering until thickened.
- Arrange half of the tortilla chips in an even layer across the bottom of the aluminum tray.
- Sprinkle half of the Mexican cheese blend and half of the cheddar cheese over the chips.
- Distribute half of the seasoned meat, black beans, bell peppers, and corn over the cheese layer.
- Add the remaining tortilla chips as a second layer, then top with remaining cheeses.
- Add the rest of the meat, beans, peppers, corn, and sliced jalapeños on top.
- Cover the tray with aluminum foil and bake for 12-15 minutes until cheese is fully melted.
- Remove foil and bake for an additional 3-5 minutes until edges are slightly golden.
- Remove from oven and immediately top with fresh tomatoes, cilantro, green onions, and red onions.
- Add dollops of sour cream across the surface and serve with lime wedges alongside.
