Ingredients
  

Base Layer
  • 1 large bag tortilla chips 14-16 oz
  • 2 cups Mexican cheese blend shredded
  • 1 cup cheddar cheese shredded
Protein & Vegetables
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans 15 oz, drained and rinsed
  • 1 bell pepper diced
  • 1 medium onion diced
  • 2 jalapeños sliced
  • 1 cup corn kernels
Fresh Toppings
  • 0.5 cup sour cream
  • 1 medium tomato diced
  • 0.25 cup fresh cilantro chopped
  • 2 green onions sliced
  • 1 lime cut into wedges
  • 0.25 cup red onion finely diced

Method
 

  1. Preheat your oven to 375°F (190°C) and line a large disposable aluminum tray with parchment paper if desired.
  2. Cook the ground meat in a large skillet over medium-high heat, breaking it apart as it cooks until fully browned, about 8-10 minutes.
  3. Add the taco seasoning and follow package directions, typically adding water and simmering until thickened.
  4. Arrange half of the tortilla chips in an even layer across the bottom of the aluminum tray.
  5. Sprinkle half of the Mexican cheese blend and half of the cheddar cheese over the chips.
  6. Distribute half of the seasoned meat, black beans, bell peppers, and corn over the cheese layer.
  7. Add the remaining tortilla chips as a second layer, then top with remaining cheeses.
  8. Add the rest of the meat, beans, peppers, corn, and sliced jalapeños on top.
  9. Cover the tray with aluminum foil and bake for 12-15 minutes until cheese is fully melted.
  10. Remove foil and bake for an additional 3-5 minutes until edges are slightly golden.
  11. Remove from oven and immediately top with fresh tomatoes, cilantro, green onions, and red onions.
  12. Add dollops of sour cream across the surface and serve with lime wedges alongside.

Notes
