Ingredients
  

  • 12 oz pasta
  • 1 lb shrimp peeled and deveined
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 2 cups cherry tomatoes halved
  • 4 cups fresh spinach
  • 0.25 tsp red pepper flakes optional
  • salt and black pepper to taste
  • 0.5 cup Parmesan cheese grated

Equipment

  • Large skillet
  • Pasta pot
  • Tongs
  • Colander

Method
 

  1. Cook pasta until al dente and reserve pasta water.
  2. Season and cook shrimp briefly in olive oil. Remove and set aside.
  3. Sauté garlic, then add tomatoes and red pepper flakes.
  4. Add spinach and cook until wilted.
  5. Return shrimp and add pasta.
  6. Toss with pasta water as needed and finish with Parmesan.

Notes

Serve immediately for best texture and flavor.
