Ingredients
  

  • 1 large spaghetti squash
  • 2 tbsp olive oil
  • 1.5 lb chicken breasts boneless, skinless
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 0.75 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese grated
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • 0.75 tsp salt or to taste
  • 0.25 tsp black pepper

Method
 

  1. Roast spaghetti squash until tender and scrape into strands.
  2. Season chicken and sear in skillet until golden; remove.
  3. Sauté garlic and sun-dried tomatoes in the same skillet.
  4. Add broth and cream; simmer gently.
  5. Stir in Parmesan until sauce thickens.
  6. Add spinach and allow to wilt.
  7. Return chicken to skillet and simmer until cooked through.
  8. Serve over spaghetti squash.

Notes

Do not boil sauce aggressively to avoid separation.
