Method
- Roast spaghetti squash until tender and scrape into strands.
- Season chicken and sear in skillet until golden; remove.
- Sauté garlic and sun-dried tomatoes in the same skillet.
- Add broth and cream; simmer gently.
- Stir in Parmesan until sauce thickens.
- Add spinach and allow to wilt.
- Return chicken to skillet and simmer until cooked through.
- Serve over spaghetti squash.
Notes
Do not boil sauce aggressively to avoid separation.
