  • 2 tbsp herb cream cheese or hummus
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil-based mayo
Fresh Vegetables
  • 0.5 ripe avocado thinly sliced
  • 4-5 cucumber slices cut diagonally
  • 2-3 roasted red pepper strips
  • 2-3 thin red onion slices
  • 3-4 cherry tomatoes halved
  • 2 large butter lettuce leaves
  • 1 handful fresh spinach leaves
  • 2 tbsp mixed microgreens or sprouts
Flavor Enhancers
  • 1 tbsp sunflower seeds
  • 0.25 tsp everything bagel seasoning
  • 1 tsp fresh lemon juice
  • salt and black pepper to taste

Method
 

  1. Toast bread slices to golden brown, ensuring they're sturdy enough to hold all ingredients.
  2. Prepare all vegetables by washing and drying thoroughly. Slice cucumber diagonally for maximum surface area.
  3. Mash avocado with lemon juice, salt, and pepper until creamy but still slightly chunky.
  4. Spread herb cream cheese on one bread slice and Dijon mustard mixture on the other.
  5. Layer butter lettuce leaves on bottom slice, followed by spinach leaves.
  6. Arrange cucumber slices in overlapping pattern, then add roasted red pepper strips.
  7. Spread seasoned avocado mixture evenly, then add cherry tomato halves cut-side down.
  8. Sprinkle sunflower seeds and everything bagel seasoning over tomatoes.
  9. Top with microgreens and red onion slices, then place second bread slice on top.
  10. Cut sandwich diagonally in half using sharp knife, securing with toothpicks if needed.

Notes

For best results, use the freshest vegetables available. Sandwich can be customized with seasonal vegetables. Store assembled sandwich wrapped in parchment paper for up to 4 hours.
