Ingredients
  

Salad
  • 3 cups broccoli florets chopped
  • 1 can chickpeas drained and rinsed
  • 1 cup carrots shredded
  • 0.25 cup red onion diced
  • 0.33 cup cashews chopped
Curry Dressing
  • 0.5 cup vegan yogurt or vegan mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup
  • 1-2 tsp curry powder
  • 0.5 tsp garlic powder
  • 0.5 tsp turmeric optional

Method
 

  1. Chop broccoli into small bite-sized pieces.
  2. Drain and rinse chickpeas.
  3. Combine broccoli, chickpeas, carrots, onion, and cashews in a bowl.
  4. Whisk vegan yogurt, lemon juice, maple syrup, curry powder, garlic powder, and turmeric.
  5. Pour dressing over salad and toss well.
  6. Chill 20 minutes before serving.

Notes

Add raisins or chopped dates for a sweet contrast to the curry spices.
