Ingredients
  

  • 1 lb ground pork
  • 2 tbsp neutral oil
  • 2 tbsp sugar
  • 1 shallot finely chopped
  • 3 cloves garlic minced
  • 2 red chili sliced, optional
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 0.5 tsp black pepper
  • 2 scallions sliced

Equipment

  • Wok or large skillet
  • Wooden spoon

Method
 

  1. Heat oil in a pan and melt sugar until amber.
  2. Add shallots, garlic, and chili; stir briefly.
  3. Add pork and break apart, coating with caramel.
  4. Season with fish sauce, soy sauce, and pepper.
  5. Cook until pork is caramelized and glossy.
  6. Finish with scallions and serve hot.
