Ingredients
  

Pasta
  • 8 oz dry pasta
  • 1 block feta cheese (7-8 oz)
  • 2 cups cherry tomatoes
  • 3 cloves garlic minced
  • 0.25 cup olive oil
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes optional
  • 0.25 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup fresh basil chopped

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss cherry tomatoes with olive oil, garlic, oregano, salt, and pepper in a baking dish.
  3. Place feta block in the center and drizzle with olive oil.
  4. Bake 25-30 minutes until tomatoes burst and feta softens.
  5. Cook pasta until al dente and reserve 1/2 cup pasta water.
  6. Mash baked feta and tomatoes into a creamy sauce.
  7. Add pasta and reserved water, toss until coated. Stir in basil and serve.

Notes

Use block feta for best texture. Add pasta water gradually to adjust sauce consistency.
